STANDO Ltd, as a proud partner of the Insects Innovation in Gastronomy (IIG) project, announces the release of the Action Manual, a comprehensive toolkit designed to support chefs, educators, restaurateurs, and vocational training (VET) professionals in integrating edible insects into everyday gastronomy.
Developed through a collaborative effort of experts across Europe, the Action Manual provides 14 evidence-based guidelines that offer clear, practical pathways to overcome cultural barriers and consumer hesitation, while promoting trust and innovation in the food sector.

Key features of the Action Manual include:
- Strategies for creating engaging menus with insect-based ingredients.
- Approaches to address consumer concerns and encourage positive attitudes.
- Communication tools for building credibility and food literacy.
- Step-by-step instructions, case studies, and real-world examples to support practical application.
The Action Manual forms part of the IIG project’s broader mission to align gastronomy with European sustainability goals, including the Green Deal and Farm to Fork Strategy. By offering operational tools alongside cross-country research, the project seeks to normalize insect consumption as part of a sustainable and future-ready food culture.
The Action Manual is freely available to download on the project’s website
